Executive Assistant Manager

The Executive Assistant Manager role will function as a 2IC for our precinct, overseeing Pullman, Novotel & ibis Sydney Olympic Park. This role will have a focus on Food & Beverage, thus we are looking for an experienced leader who is confident in all areas of the Food & Beverage operation. In this cross-complex role, you will work alongside our experienced Executive Committee and assist our General Manager in delivering exceptional guest experiences. This role is perfect for a candidate who is ready to make their mark on Australia’s premier event precinct.

This is a fast-paced role that requires long term strategic planning, overseeing five outlets – each with an individualised and tailored offering to exceed the expectations of our varied guests across each a range of segments. You will need a passion for Hospitality, a mind for creative strategies, strong problem-solving skills, excellent people management and an eye for premium guest experience.

This role is perfect for an experienced leader who is looking for their career to develop in a fast-paced Precinct. You will:

  • Oversee the daily operation of our Culinary, Conference & Events, Bacar, Boulevard Brasserie, Brewery Bar & Kitchen, and Room Service as a single integrated operation.
  • Ensure Brand Standards are embedded in daily operations cross-complex; conduct regular self-audits and implement corrective actions.
  • Coordinate with Sales & Marketing, Front Office, Housekeeping and other departments to ensure seamless service across the precinct.
  • Analyse guest satisfaction data to implement action plans to improve scores, ratings, and overall experience.
  • Take accountability for financial performance across all outlets, managing rosters throughout our dynamic business demands, wage costs, food & beverage expenses and controllable costs to budget.
  • Lead, develop and support our team with a focus on the Food & Beverage leaders; succession plan, manage performance, and provide guidance and support to Outlet Managers & our Culinary leaders.
  • Establish and maintain ongoing training programs aligned with Accor Brand and Service Standards and our P&C team.
  • Maximise revenue by reviewing occupancy and rates, and drive upselling, promotions, and walk‑in conversion across all channels.
  • Ensure compliance with WHS policies, RSA and licencing requirements and the Accor InterREACT programme.
  • Ensure financial transactions, credit handling, and cash security follow policy and compliance standards, in collaboration with Finance.
  • Build familiarity with VIP and regular guests to deliver personalised, exceptional experiences.
  • Proven F&B management experience in a high-volume premium or luxury hotel, with responsibility across multiple outlets.
  • Demonstrated ability to lead and provide strategic direction to a multi-skilled team.
  • Strong financial acumen including solid understanding around labour cost, P&L analysis and forecasting.
  • Proven experience leading teams across brands.
  • Excellent people management, interpersonal and influencing skills.
  • Exceptional client/supplier relationship skills, particularly with event clients and corporate stakeholders.
  • Outstanding written and verbal communication skills.
  • Current RSA certification and sound knowledge of liquor licensing requirements.
  • Distinguished personal presentation in alignment with brand standards.
  • Genuine passion for hospitality and a guest-first attitude.
